SMOKEHOUSE
The smokehouse is also situated behind the Halfway House. Advance Moving Contractors, Inc. moved it from Max Gartner's farm on 87th Street in the summer of 1977. The building measures 8 feet high, 7 feet long and 6 feet wide. The walls are of brick construction, two bricks thick. A stone slab serves as the roof. It weighs over 4,000 pounds. The farm family used the smokehouse to smoke their sausage, ham and bacon as one method of preserving the meat after butchering. To smoke the meat, the farmer covered the dirt floor with sand and hickory limbs. The tree limbs would smoke the meat hanging over them, filling the air with a hickory aroma. Later, the meat would be packed in salt or left to hang in the smokehouse. |
